Pralines: Pure bliss for the taste buds

The confectionery collection at Cochin Duty Free includes wide varieties of pralines

Pralines, the irresistible sugar-pecan concoction, are tiny treats with a big history. In simple terms, it is a type of sugary, nutty candy.

The origin of Pralines dates back to the seventeenth-century. Pralines are named after a French diplomat whose name and title was César, duc de Choiseul, comte du Plessis-Praslin. The actual creator of the praline, however, is believed to be his personal chef Clement Lassagne. The original praline was a sweet confection made of almonds with caramelized coating.

There are mainly three types of pralines:

Belgian pralines: They consist of a chocolate shell with a soft filling made of different combinations of hazelnut, almonds, sugar, syrup, and often milk-based pastes.

French pralines: A firm combination of almonds and caramelized sugar.

American pralines: A soft creamier combination of syrup and pecans, hazelnuts or almonds with milk or cream.
